Mexican Quesadillas

I know what you're thinking! "Aren't all quesadillas Mexican??" Well, technically, I guess so. But these have refried beans in them so they are doubly Mexican! :)

2 cups cubed raw chicken breast (or use cooked and skip a step!)
1 can mushrooms
1/2 can diced tomatoes
salt and pepper
1 tsp. each garlic and onion powder
1 tsp. taco seasoning
1/2 can refried beans
1 cup cheese
8 flour tortillas
Ranch or salsa for dipping




Saute chicken in small amount of oil with seasonings.



Add mushrooms and cook for three minutes.



Add tomatoes, no juice. I mashed my tomatoes with a fork because I don't like big chunks of tomatoes. If you don't mind that just dump them in!



Spread even layer of beans on tortilla.



Top with 1/4 chicken mixture.



Spread 1/4 cup cheese over mixture and cover with another tortilla. Cook over medium low heat in a pan coated with cooking spray until browned. Flip and cook until cheese is melted.



Dip in ranch or salsa! Perfect for a quick lunch!
