Mamaw's Cobbler

There are some things in life that can't be topped, whether by a fancy restaurant or a world-class chef.  And one of those things are recipes made by a parent or grandparent that you have eaten your whole life. They bring a host of memories along with the deliciousness! Thankfully, I'm blessed to have great cooks in my family. My mom spent countless hours teaching me to cook and letting me mess around in the kitchen. Not to mention how she still finances my culinary education with cookbooks and cooking magazines.  Who would have thought then that cooking would be so important for our family with Micah's special nutritional needs?

My mamaw Jane also has superior skills in the kitchen. I called her on the phone one afternoon to ask her for her cobbler recipe. Nobody does it like her. And if I was going to make one why not ask the expert so I can do it right? She told me this is called a quick cobbler. 

Now she makes an apple cobber. Peels, slices, and cooks her apples. Seasons them. I just bought canned pie filling. (Shhhh....don't tell.) My husband informed me that it tasted just like hers does. Sweet success! 

2 cans pie filling (I used cherry. It was delicious but full of red food dye which I usually try to avoid it.)
1 cup self-rising flour (You can add 1 1/2 tsp. baking powder and 1/2 tsp. salt to all-purpose flour)
1/2 cup sugar
3/4 cup milk
1 stick butter


 See? Pie filling!


Mix together flour, sugar, and milk.


Melt stick of butter in 9*13 pan.


Pour batter on top of butter.


Evenly spoon pie filling over batter.  I would have totally done this backward. It pays to check with the expert. 

Bake at 350 for approximately 45 minutes. The pie filling was thicker than her apple filling. Think strawberry glaze-like except not strawberry. I would mix a small amount of water into the pie filling next time to prevent this but it was still delicious! No one else seemed to mind. 


 Yum! Just what I needed. Another dessert to love! haha
