Chicken Taco Cups

This recipe isn't too wow you with how cool it is. Maybe how easy but not cool. It's really a "hey, let's get creative and throw together some quick tasty food when we need to" kinda post. 

I have this corn tortilla crazy going on right now. I love them. Justin was coming home early for lunch and I needed to throw something together really quickly for him and this is what we ate. We were both happy!

6 corn tortillas, torn in half
1 cup cubed, cooked chicken (I keep this in my freezer)
3/4 cup black beans
1/2 cup salsa
3/4 cup cheddar cheese


Warm tortillas in microwave until pliable. Shove them into muffin tins any ol' way. Bake at 350 for 10 minutes or until crispy. Keep an eye on them; the top edges will brown first.


Micah even had some with a corn and mushroom filling!


Warm chicken, beans, and salsa in a skillet over medium-low heat.


Scoop filling into tortillas and top with cheese.


Bake at 400 until cheese is melted. Or if you're really in a hurry, put them under the broiler. Enjoy your o-so-fast food and wow yourself with how quick you can cook!  :)
