Roasted Chicken and Vegetables

The weather turned cool at our house this weekend. I love fall and fall food! We also had friends over so this was the perfect time to start with fall food! Justin said that he remembered my mom cooking this when we were dating! Thanks, Mom!

1 chicken
4 carrots, peeled and cut into large chunks
2 potatoes, peeled and cut into large chunks
1 onions, sliced into chunks
2 cups chicken broth
2 tsp. paprika
salt and pepper
1 tsp. garlic powder
2 tsp. thyme



Remove the fat from your chicken. Yes, I thought it was gross too.



Prep your veggies. Salt and pepper them.



Heat a small amount of oil in a oven-proof pot. A large pot. Brown chicken, breast-side down first.



When you flip the chicken (use two large forks) sprinkled the browned side with paprika.



When chicken is browned on both sides, add veggies to pot. Push them down and around the chicken. Add chicken broth and seasonings. Cover pot with lid.



Bake at 350 degrees for 1 1/2 hours.



Remove chicken from pot and serve with the veggies.



It's perfect fall food! We always eat it with biscuits. And we also had pie!
